Fall in Love With Passion Fruit

According to Brazilian folklore, after eating a passion fruit, you will fall in love with the next person you see. Even if you don’t believe the legend, this delectable fruit is definitely worth a try.

When you see the word passion fruit, you might be expecting something exotic, but looks can be deceiving. This unassuming little fruit is bursting with flavor that’s sweet and tart, similar to pineapple or guava. Passion fruit is extremely versatile and can be used to enhance flavor in a variety of different dishes. It can be eaten raw or in a fruit salad or smoothie, and when the pulp has been cooked down, it makes a tasty jam or jelly.

One passion fruit contains only 17 calories, is an excellent source of vitamin A, vitamin C and fiber, and is also rich in minerals such as calcium, iron, potassium and magnesium. It’s packed with antioxidants that have been found to prevent certain cancers and support a healthy immune system, and the seeds of the fruit have been shown to help lower cholesterol and triglycerides.

Passion Fruit Kisses

Ingredients
1/2 cup softened butter
1 teaspoon grated lemon rind
1/2 cup powdered sugar
1 egg
1 1/4 cups plain flour, sifted
1/4 teaspoon baking soda
1/2 cup white chocolate, chopped
2 Tablespoons cream
2 passion fruits, halved

Directions

Preheat oven to 400 degrees. Line three sheet pans with baking paper.

Using an electric mixer, beat butter, lemon rind and powdered sugar for 5 minutes or until light and fluffy. Add egg. Beat to combine. Stir in flour and baking soda. Remove pulp of one passion fruit with a spoon and add to mixture.

Roll teaspoons of mixture into balls and place 1 1/2 inches apart on prepared pans. Flatten each slightly with the back of a spoon. Bake, one tray at a time, for 8 to 10 minutes or until light gold in color. Allow to cool for 5 minutes.

Place chocolate and cream in a microwave safe bowl and microwave on high for 1 minute, stirring frequently, until melted and smooth. Mix in the remaining passion fruit pulp and let stand until thickened. Using a teaspoon, gently top each ball with mixture and let stand for 5 minutes. Recipe creates approximately 40 single-kiss servings.
